Ingredients
Scale
Filling
- 2 to 3 tart and sweet apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- Pinch of salt
Pie Dough
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) cold unsalted butter, cubed
- 4 to 6 tablespoons cold water
Finishing
- 1 egg, beaten (for egg wash)
Instructions
- Prepare the Filling: Peel, core, and dice the apples into small, even pieces. Toss them with cinnamon, brown sugar, lemon juice, and a pinch of salt until well combined to create a warm, spiced apple mixture.
- Make the Pie Dough: In a large bowl, mix the all-purpose flour and salt. Add the cold, cubed butter and cut it in with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, just until the dough begins to come together. Shape into a disk, wrap, and chill in the refrigerator for 30 minutes.
- Roll Out and Cut Dough Circles: On a lightly floured surface, roll the chilled dough to about 1/8-inch thickness. Use a round cutter or glass to cut out circles about 4 to 5 inches wide for individual pies.
- Fill and Seal: Spoon a moderate amount of the apple filling into the center of each dough circle. Brush the edges with a little water, fold the dough over to create a half-moon shape, and press the edges firmly with a fork to seal. Make small slits on top to vent steam.
- Egg Wash and Bake: Brush each pie with the beaten egg for a golden, glossy finish. Place them on a parchment-lined baking sheet and bake in a preheated oven at 375°F (190°C) for 20 to 25 minutes, until the crust is golden and filling is bubbly.
Notes
- Keep ingredients cold to ensure a flaky crust.
- Do not overfill pies to prevent bursting during baking.
- Vent pies by making small slits in the crust for steam release.
- Chill dough before rolling for easier handling.
- Cut apples into uniform pieces for even cooking.
