Instructions

  1. Prepare the Filling: Peel, core, and dice the apples into small, even pieces. Toss them with cinnamon, brown sugar, lemon juice, and a pinch of salt until well combined to create a warm, spiced apple mixture.
  2. Make the Pie Dough: In a large bowl, mix the all-purpose flour and salt. Add the cold, cubed butter and cut it in with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, just until the dough begins to come together. Shape into a disk, wrap, and chill in the refrigerator for 30 minutes.
  3. Roll Out and Cut Dough Circles: On a lightly floured surface, roll the chilled dough to about 1/8-inch thickness. Use a round cutter or glass to cut out circles about 4 to 5 inches wide for individual pies.
  4. Fill and Seal: Spoon a moderate amount of the apple filling into the center of each dough circle. Brush the edges with a little water, fold the dough over to create a half-moon shape, and press the edges firmly with a fork to seal. Make small slits on top to vent steam.
  5. Egg Wash and Bake: Brush each pie with the beaten egg for a golden, glossy finish. Place them on a parchment-lined baking sheet and bake in a preheated oven at 375°F (190°C) for 20 to 25 minutes, until the crust is golden and filling is bubbly.
