Ingredients
Scale
Sausage Gravy
- 1 pound breakfast sausage (ground)
- 3 tablespoons all-purpose flour (or gluten-free flour)
- 2 ½ cups milk (warm)
- 1 tablespoon butter
- Salt, to taste
- Black pepper, to taste
- Optional: Fresh herbs (chives, parsley, thyme, or rosemary)
- Optional: ¼ teaspoon cayenne pepper or red pepper flakes (for spicy kick)
- Optional: 1 cup shredded cheddar cheese (for cheesy upgrade)
Biscuits
- 8 to 10 store-bought or homemade biscuits (gluten-free biscuits can be used)
- Butter or non-stick spray (for greasing the baking dish)
Garnishes (optional)
- Fresh chopped parsley or chives
- Cracked black pepper
Instructions
- Prepare the Sausage Gravy: In a large skillet over medium heat, cook the breakfast sausage, breaking it apart until browned and fully cooked. Remove excess fat if necessary. Sprinkle flour evenly over the sausage and stir well to combine. Cook for 2-3 minutes to form a roux and eliminate the raw flour taste.
- Add Milk and Season: Slowly whisk in warm milk to the sausage mixture, stirring continuously to prevent lumps. Allow the gravy to simmer until it thickens to a creamy consistency. Season with salt, pepper, and any optional herbs or spices to enhance flavor.
- Prepare the Biscuits: If using store-bought biscuits, cut them into halves or quarters to allow better gravy absorption. For homemade biscuits, bake as per your recipe and let them cool slightly before slicing.
- Assemble the Casserole: Grease a baking dish with butter or spray. Layer the cut biscuits evenly inside the dish. Pour the warm sausage gravy over the biscuits, ensuring all pieces are coated. Sprinkle shredded cheese on top if using.
- Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the casserole for 20-25 minutes or until the top is golden and bubbly. Remove from the oven and let it rest for a few minutes before serving.
Notes
- Use good quality sausage for the best flavor.
- Do not rush cooking the roux to avoid a raw flour taste and to perfectly thicken the gravy.
- Warm milk helps the gravy to thicken faster and stay smooth.
- Customize biscuits with buttermilk or flaky types for extra tenderness.
- Let the casserole rest after baking to let flavors meld and ease slicing.
- For a vegetarian version, substitute sausage with sautéed mushrooms and plant-based sausage.
- To make it gluten-free, use gluten-free biscuits and flour.
- Reheat leftovers in the oven at 350°F for best texture; avoid microwaving.
