Instructions
- Prepare the Filling: In a medium bowl, combine softened cream cheese, fresh blueberries, sugar, and lemon zest if using. Gently fold together until creamy with chunks of berries for bursts of flavor.
- Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean surface in a diamond shape. Spoon 2 tablespoons of filling near the bottom corner. Fold that corner over the filling, then fold in the sides tightly and roll up firmly to the top corner. Seal the edges with egg wash or water.
- Cook Until Golden: For frying, heat oil to 350°F and fry egg rolls 2-3 minutes per side until golden and crispy. For baking, preheat oven to 400°F and bake on a parchment-lined tray for 12-15 minutes, flipping halfway through, brushing or spraying lightly with oil.
- Cool and Serve: Transfer cooked egg rolls to a paper towel-lined plate to absorb excess oil. Serve warm for best texture and flavor.
