Ingredients
Vegetables and Herbs
- Fresh spinach – 1 lb (about 5 cups packed)
- Garlic cloves – 3, minced
- Italian herbs (basil, oregano, thyme) – 2 tsp mixed dried or 1 tbsp fresh chopped
- Fresh basil or parsley (for garnish) – optional
Cheeses
- Ricotta cheese – 1 cup
- Mozzarella cheese – 1 1/2 cups shredded
- Parmesan cheese – 1/2 cup grated
Other Ingredients
- Crushed tomatoes or marinara sauce – 1 cup
- Olive oil – 2 tbsp
- Salt – 1 tsp (adjust to taste)
- Black pepper – 1/2 tsp (freshly ground)
- Bread crumbs (optional) – 1/4 cup for topping
Instructions
- Prepare the Spinach: Thoroughly wash the fresh spinach to remove grit, then sauté it in olive oil with minced garlic over medium heat until wilted and fragrant. Remove excess moisture by squeezing out any water from the cooked spinach. Let it cool slightly.
- Mix the Cheeses and Seasonings: In a large bowl, combine ricotta, shredded mozzarella, grated Parmesan, salt, pepper, and Italian herbs. Stir well to form a creamy, flavorful cheese mixture.
- Combine Spinach and Tomato Sauce: Fold the cooled spinach into the cheese mixture, then add the crushed tomatoes or marinara sauce. Mix until everything is evenly combined for a balanced taste.
- Assemble in a Baking Dish: Grease a casserole dish and spread the mixture evenly inside. Optionally, sprinkle bread crumbs on top for a crispy crust.
- Bake Until Golden: Preheat oven to 375°F (190°C) and bake the casserole for 25-30 minutes, or until the topping is bubbly and golden brown. Remove from oven and let it rest for a few minutes before serving to allow it to set.
Notes
- Drain excess moisture from cooked spinach thoroughly to avoid soggy bake.
- Use fresh basil and oregano when possible for brighter, more vibrant flavor.
- Reserve some mozzarella cheese to sprinkle on top for a beautifully melted crust.
- Opt for high-quality cheeses to elevate flavor and melting quality.
- Let the bake cool slightly before slicing for clean, neat portions.
