Instructions
- Prepare the Chicken: Heat olive oil or butter in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and minced garlic. Cook until golden brown on both sides and nearly cooked through. Remove from heat and let rest.
- Mix the Base Ingredients: In a large bowl, combine uncooked long-grain white rice, condensed cream of mushroom soup, chicken broth, onion powder, and additional salt and pepper to taste. Stir well to create a creamy rice mixture.
- Assemble the Casserole: Grease a casserole dish. Place the cooked chicken pieces evenly in the dish. Pour the rice mixture over the chicken, spreading it out evenly. Cover tightly with aluminum foil to retain moisture.
- Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the casserole covered for 35 minutes. Then remove the foil, sprinkle shredded cheddar cheese evenly on top, and bake uncovered for an additional 10 minutes or until the cheese is melted, bubbly, and golden.
- Garnish and Serve: Remove from oven and allow the casserole to rest for 5 minutes. Garnish with freshly chopped parsley before serving for added color and freshness.
