Ingredients
Scale
Main Ingredients
- 2 tablespoons fresh ginger, peeled and finely grated
- 4 garlic cloves, minced
- 1 lb chicken thighs, shredded or cubed
- 6 cups chicken broth
- 2 cups egg noodles (or preferred noodles)
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- Salt and pepper to taste
Optional Ingredients
- Fresh parsley or cilantro, chopped (for garnish)
- 1 tablespoon lemon juice (optional, for brightness)
- 1–2 teaspoons oil (for sautéing)
Instructions
- Prep the Fresh Ingredients: Peel and finely grate the ginger and mince the garlic cloves. Chop carrots, celery, and herbs, and shred or cube the chicken for even cooking later.
- Sauté Aromatics: Heat a little oil in a large pot and gently sauté the ginger and garlic until fragrant, about 2 minutes. This builds the flavor base for your soup.
- Cook the Vegetables and Chicken: Add chopped carrots and celery to the pot, cooking for another 3-4 minutes until they soften slightly. Then add the chicken pieces and sear lightly to seal in juices.
- Add Broth and Simmer: Pour in chicken broth and bring to a gentle simmer. Let the soup cook gently for 15-20 minutes to allow flavors to meld and the chicken to cook through.
- Add Noodles and Finish: Stir in noodles and cook according to package instructions until tender. Season with salt, pepper, and optionally lemon juice to brighten the broth before serving.
Notes
- Always use fresh ginger for maximum flavor and benefits.
- Simmer gently once chicken is added to keep the meat tender and broth clear.
- Homemade chicken broth will create a richer, more nourishing base.
- Add noodles towards the end to avoid mushy texture.
- Let soup rest off the heat for a few minutes before serving to deepen flavors.
