Scale
Proteins
- 1 lb ground meat (pork, chicken, or turkey)
Vegetables
- 2 cups green cabbage, chopped
- 1 cup carrots, shredded
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 green onions, sliced
Liquids & Sauces
- 6 cups chicken or vegetable broth
- 3 tablespoons soy sauce (or low-sodium soy sauce)
- 1 teaspoon sesame oil, plus extra for finishing
Optional Ingredients
- Chili flakes, to taste
- Tofu or extra mushrooms (for vegetarian version)
- Cooked noodles or rice (for a more filling meal)
- Extra veggies such as snap peas, bell peppers, or baby corn
- Sriracha or fresh chopped jalapeños (for spice)
Instructions
- Prepare your ingredients: Chop the cabbage, shred the carrots, mince the garlic and ginger, and slice the green onions so all components are ready.
- Brown the ground meat: Heat a drizzle of sesame oil in a large pot over medium heat. Add the ground meat and cook until browned and crumbled, building a savory base.
- Sauté aromatics: Add the minced garlic and ginger to the browned meat. Stir for about one minute until fragrant.
- Add vegetables: Stir in shredded carrots and chopped cabbage, tossing to slightly soften the vegetables while maintaining some texture.
- Pour in broth and season: Add chicken or vegetable broth and soy sauce to taste. Bring to a gentle boil, then reduce heat to simmer.
- Simmer and finish: Let the soup simmer uncovered for about 15 minutes to deepen flavors and soften vegetables. Before serving, stir in sliced green onions and a splash more sesame oil.
Notes
- Use fresh ginger for a fragrant warmth in the soup.
- Don’t overcook the vegetables; keep cabbage and carrots slightly crisp.
- Adjust soy sauce gradually to avoid over-salting.
- Brown the meat well to enhance savory depth.
- Finish with sesame oil right before serving for maximum aroma and flavor.
