Pierogi and Dairy Ingredients
- 1 package frozen potato and cheese pierogis (about 20–24 pieces)
- 1 cup sour cream (full-fat recommended)
- 2 cups shredded cheddar cheese (or cheese blend)
- 1 to 1 1/2 cups milk or cream (full-fat for best creaminess)
Aromatics
- 2 tablespoons butter
- 1 medium onion, diced
- 2 cloves garlic, minced
Seasonings and Herbs
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley or chives, chopped (optional, for garnish)
Instructions
- Prepare the aromatics: Melt the butter in a pan over medium heat. Add the diced onions and minced garlic, cooking until they become soft, fragrant, and slightly caramelized to build a savory base for the casserole.
- Layer the ingredients in the crockpot: Place half of the frozen pierogis in an even layer at the bottom of the crockpot. Sprinkle half of the sautéed onions and garlic over the pierogis. Add a generous layer of shredded cheese and dollops of sour cream. Repeat with the remaining pierogis, onions, garlic, and cheese layers.
- Add the creamy sauce: Pour the milk or cream evenly over the layered ingredients, ensuring that everything is well-coated to help create a rich, luscious casserole as it cooks.
- Cook low and slow: Cover the crockpot and cook on low heat for 3 to 4 hours, until the pierogis are tender, cheese completely melted, and the casserole is bubbling with flavor.
- Finish and serve: Before serving, gently stir the casserole to combine all ingredients evenly. Sprinkle freshly chopped parsley or chives on top for a bright, fresh finish.
Notes
- Do not thaw the pierogis before cooking; using them frozen helps maintain texture and prevents sogginess.
- Use full-fat sour cream, cheese, and milk or cream for the creamiest, richest sauce.
- Layer ingredients evenly to ensure each bite is flavorful and balanced.
- Cook the casserole on low to avoid overcooking and drying out the dish.
- Add fresh herbs just before serving to retain their vibrant flavor and appearance.
