Ingredients
Scale
Shrimp and Pasta
- 1 lb peeled and deveined shrimp
- 8 oz fettuccine or linguine pasta
Sauce
- 3 cloves fresh garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons butter
- 1 tablespoon olive oil
Seasoning and Garnish
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook the Pasta: Start by boiling salted water and cooking your pasta until just al dente according to the package instructions. Drain and set aside, reserving a cup of pasta water to adjust sauce consistency later if needed.
- Sauté the Shrimp: Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper, then cook for about 1-2 minutes per side until pink and opaque. Remove shrimp from the pan and set aside to avoid overcooking.
- Make the Garlic Cream Sauce: In the same skillet, melt butter and sauté minced garlic until fragrant, about 30 seconds to 1 minute. Pour in the heavy cream and bring to a gentle simmer, allowing it to thicken slightly. Stir in grated Parmesan cheese until melted and smooth.
- Combine Pasta and Shrimp: Add the cooked pasta and shrimp back into the skillet with the sauce. Toss everything together until the pasta is well coated. If the sauce is too thick, add reserved pasta water a little at a time to reach the perfect consistency.
- Final Touches: Season with additional salt and pepper to taste. Sprinkle freshly chopped parsley on top for brightness and serve immediately while warm and creamy.
Notes
- Don’t overcook the shrimp to keep them tender and juicy; remove from heat as soon as they turn pink.
- Reserve pasta water to loosen the sauce without watering down the flavor.
- Use fresh garlic for the best aroma and taste compared to pre-minced or powdered garlic.
- Grate Parmesan fresh to ensure the sauce melts smoother and is creamier.
- Simmer the cream sauce gently to avoid curdling and maintain a silky texture.
