Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until tender. Drain and set aside, reserving a small cup of pasta water for later.
- Sauté Garlic and Spinach: Heat olive oil or butter in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Toss in fresh spinach and sauté until wilted but still bright green.
- Prepare the Creamy Sauce: Pour heavy cream into the skillet with the spinach. Let it simmer gently for a few minutes until it thickens slightly. Stir in grated Parmesan cheese until melted and smooth.
- Combine Tortellini and Sauce: Add the cooked tortellini to the skillet, tossing everything together. If the sauce is too thick, stir in a little reserved pasta water to reach your desired consistency. Season with salt, pepper, and red pepper flakes if using.
- Serve and Enjoy: Remove from heat and serve warm. Garnish with extra Parmesan or fresh herbs if desired for a final touch.
