Instructions
- Sauté the Aromatics: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely chopped onion and minced garlic, cooking until fragrant and translucent to create a flavorful base for the sauce.
- Toast and Cook the Orzo: Add 1 cup of dry orzo to the skillet and stir with the aromatics for about one minute to lightly toast the pasta. Pour in 2 ½ cups of warm chicken or vegetable broth and simmer, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
- Add Spinach and Sun-Dried Tomatoes: Fold in 1 cup of fresh spinach and ½ cup chopped sun-dried tomatoes. Stir until the spinach wilts, enhancing the dish with fresh color and vibrant flavors.
- Stir in Cream, Cheese, and Herbs: Reduce the heat to low. Pour in 1 cup of heavy cream or half-and-half, then add ½ cup freshly grated Parmesan and 1 teaspoon of Italian herbs (basil and oregano). Stir gently until the sauce thickens slightly and evenly coats the orzo.
- Season and Serve: Taste the dish and adjust seasonings with salt and freshly cracked black pepper as needed. Serve the Creamy Tuscan Orzo piping hot, garnished with preferred toppings such as fresh parsley, basil, toasted pine nuts, or crispy prosciutto.
