Ingredients
Scale
Sausage and Meat
- 1 pound Italian sausage (spicy or mild)
Vegetables and Aromatics
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3–4 medium Yukon Gold or russet potatoes, peeled and cubed
- 4 cups fresh spinach or kale
Liquids and Dairy
- 4 cups chicken broth
- 1 cup heavy cream
Cheese and Seasoning
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions
- Brown the Sausage: Heat a large pot over medium heat and cook the Italian sausage until browned and fragrant, breaking it up into small pieces for even cooking and to release the spices.
- Sauté Aromatics: Add diced onion and minced garlic to the sausage and cook until soft and translucent, creating a flavorful base for the soup.
- Add Potatoes and Broth: Stir in cubed potatoes and pour in the chicken broth. Bring to a simmer and cook for 15-20 minutes until potatoes are tender but still hold their shape.
- Stir in Cream and Greens: Reduce heat to low, slowly add heavy cream, and stir gently to thicken the soup slightly. Add fresh spinach or kale and cook until wilted, adding color and freshness.
- Finish with Parmesan: Season with salt and pepper to taste, then sprinkle grated Parmesan cheese over the soup, stirring to blend all flavors harmoniously.
Notes
- Use quality Italian sausage for the best flavor.
- Do not overcook potatoes to keep them tender but intact.
- Add greens last to preserve vibrant color and texture.
- Adjust the amount of cream to control the richness of the soup.
- Simmer the soup gently over low heat to deepen the flavors.
