- Marinate the Chicken: Place the whole chicken in a large resealable bag or roasting pan. Pour the mimosa marinade over the chicken, rubbing it evenly into the skin and cavity. Let it marinate for at least 30 minutes up to 1 hour, or refrigerate overnight for deeper flavor.
- Preheat Oven and Prepare Chicken: Preheat your oven to 425°F (220°C). Remove the chicken from the marinade and pat the skin dry thoroughly with paper towels to ensure maximum crispiness. Place the chicken breast-side up on a rack inside a roasting pan for even airflow.
