Main Ingredients
- 1 sheet puff pastry, thawed
- 4–6 fresh figs or 1/2 cup dried figs (soaked and softened if dried)
- 4 oz goat cheese, softened
- 1 tablespoon honey, plus more for drizzling
- 1 teaspoon fresh thyme or rosemary leaves, finely chopped
- 1 egg, beaten with 1 tablespoon water (egg wash)
- Black pepper, freshly ground, to taste (optional)
Instructions
- Prepare the Puff Pastry: Thaw the puff pastry according to package instructions until pliable but still cold. Lightly flour your surface and roll out the pastry to smooth edges and ensure even thickness.
- Spread the Goat Cheese: In a small bowl, soften the goat cheese for easy spreading. Spread an even layer over the puff pastry, leaving a small border around the edges to prevent overflow while baking.
- Add Figs and Herbs: Thinly slice fresh figs and scatter them evenly over the goat cheese. Sprinkle the chopped fresh thyme or rosemary leaves over the figs for added herbal aroma and flavor.
- Roll and Slice: Starting from one edge, carefully roll the puff pastry into a tight pinwheel log. Using a sharp serrated knife, slice the log into approximately 1-inch thick rounds.
- Apply Egg Wash and Bake: Place the pinwheels on a parchment-lined baking sheet. Brush each pinwheel with the egg wash to promote browning and shine. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until golden and puffed.
Notes
- Keep the puff pastry cold to maintain the best flaky texture and ease of handling.
- Use ripe but firm figs for better texture and shape retention.
- Do not overfill to avoid leaking of cheese and figs during baking—leave a border around the edges.
- Watch baking time carefully to prevent drying out the pastry and filling.
- Use a serrated knife to slice the rolled pastry, which prevents squishing the pinwheels.
