Instructions
- Prepare the Puff Pastry: Thaw your frozen puff pastry according to package instructions. Gently unfold the sheets on a lined baking tray and lightly prick the surface with a fork to prevent excessive rising.
- Slice the Tomatoes and Mozzarella: Wash and thinly slice the fresh tomatoes and mozzarella into even pieces to ensure consistent cooking and a beautiful layered look.
- Assemble the Tarts: Arrange the tomato and mozzarella slices alternately over the puff pastry, leaving a small border around the edges. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder evenly.
- Bake Until Golden: Preheat the oven to 400°F (200°C). Place the baking tray in the oven and bake for 15–20 minutes, or until the pastry is puffed and golden, and the cheese is melted and bubbly.
- Add Fresh Basil and Serve: Remove from the oven and immediately scatter fresh basil leaves on top. Slice into portions and serve warm.
