Proteins and Pasta
- 2 cups cooked chicken, shredded or diced
- 8 ounces spaghetti, cooked al dente
Vegetables and Aromatics
- 1 cup mushrooms, sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
Sauce Ingredients
- 4 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 ½ cups milk or cream
- ½ cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
Toppings
- ½ cup breadcrumbs
- Additional Parmesan cheese for sprinkling
Instructions
- Prepare Your Ingredients: Cook spaghetti according to package instructions until al dente, then drain and set aside. While the pasta cooks, finely chop onions, mince garlic, and slice mushrooms.
- Sauté Aromatics and Mushrooms: In a large skillet, melt butter over medium heat. Add onions and garlic, sautéing until fragrant and translucent. Stir in mushrooms and cook until they release their moisture and begin to brown.
- Make the Creamy Sauce: Sprinkle flour over the mushroom mixture and stir well to coat. Gradually whisk in chicken broth and milk, continuing to stir until the sauce thickens smoothly. Season with salt, pepper, and parsley for flavor.
- Combine Pasta, Chicken, and Sauce: In a large mixing bowl, combine cooked spaghetti, shredded chicken, and the creamy mushroom sauce. Toss everything together until well coated and evenly distributed.
- Assemble and Bake: Transfer the mixture to a greased baking dish. Sprinkle the top with Parmesan cheese and breadcrumbs for a crunchy golden crust. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes, until bubbly and golden on top.
- Serve Warm and Enjoy: Once baked, allow the tetrazzini to cool slightly before serving to let the sauce settle and make portioning easier.
Notes
- Use fresh mushrooms for better flavor and texture.
- Cook pasta al dente to prevent mushiness after baking.
- Homemade chicken broth adds depth and reduces sodium.
- Sauté aromatics slowly to build rich flavors.
- For extra crispiness, toss breadcrumbs with melted butter before sprinkling on top.
