Ingredients
Scale
Carrots
- Medium-sized fresh carrots (about 1 lb)
Flavoring
- 2 tablespoons olive oil or butter
- 2–3 garlic cloves, minced
- Salt and pepper, to taste
- 1 tablespoon fresh herbs (thyme or parsley), chopped
- 1 teaspoon fresh lemon juice (optional)
Optional Variations
- Pinch of red pepper flakes or hot sauce for spice
- Drizzle honey or maple syrup for sweet glaze
- Grated Parmesan or crumbled feta cheese
- Toasted pine nuts or chopped walnuts for crunch
Instructions
- Prepare and Boil the Carrots: Wash and peel the carrots, then cut them into equal-sized chunks to ensure even cooking. Place in a pot of boiling salted water and cook for 12 to 15 minutes until fork-tender but not mushy.
- Drain and Smash: Thoroughly drain the carrots and transfer them to a large bowl. Using a potato masher or the back of a fork, gently smash each piece until it breaks apart but still retains some texture.
- Sauté with Flavor: Heat olive oil or butter in a skillet over medium heat and add minced garlic. Sauté until fragrant, then add the smashed carrots. Toss gently to coat and cook for a few minutes to develop slight caramelization and deepen flavors.
- Season and Garnish: Season with salt, pepper, and fresh herbs. Optionally, squeeze fresh lemon juice over the top to brighten the dish before serving.
Notes
- Choose fresh, firm carrots for the best texture and flavor.
- Do not over-boil carrots to maintain the perfect texture for smashing.
- Use quality olive oil or butter for richer flavor and coating.
- Be gentle when smashing to preserve a creamy yet chunky texture.
- Add fresh herbs last to preserve their brightness and aroma.
