Ingredients
Scale
Proteins
- 12 oz fresh or thawed shrimp, peeled and deveined
- 8 oz Andouille or smoked sausage, sliced into bite-sized pieces
Pasta & Grains
- 8 oz penne or rigatoni pasta
Sauces & Liquids
- 4 tbsp butter
- 2 cups chicken broth
Flavorings & Herbs
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 1/4 tsp red pepper flakes (optional)
Instructions
- Prepare the Ingredients: Peel and devein shrimp if necessary, slice the sausage into bite-sized pieces, mince garlic, and chop parsley to ensure smooth cooking without interruptions.
- Brown the Sausage: Heat a large skillet over medium heat, add the sausage pieces, and cook until nicely browned and caramelized. Then transfer to a plate and set aside.
- Sauté the Garlic and Shrimp: In the same skillet, melt butter, add minced garlic, and sauté about 30 seconds until fragrant. Add shrimp and cook until pink and opaque, approximately 2 minutes per side. Remove shrimp and set aside with sausage.
- Cook the Pasta: Add chicken broth to the skillet and scrape any browned bits from the bottom. Bring to a boil, stir in pasta, cover, and simmer gently with occasional stirring until pasta is tender and most liquid is absorbed.
- Combine and Finish: Return sausage and shrimp to the skillet, stir to combine. Sprinkle Parmesan cheese and chopped parsley over the top. Stir gently until cheese melts and everything is heated through. Add red pepper flakes if using, and season with salt and freshly ground black pepper to taste.
Notes
- Don’t overcook the shrimp to avoid rubbery texture.
- Use a heavy skillet such as cast iron or stainless steel for even browning.
- Reserve some pasta cooking liquid to loosen sauce if needed.
- Use fresh garlic for best aroma and flavor.
- Adjust salt and pepper during cooking to achieve perfect seasoning balance.
