			Steak
- 8 oz sirloin or ribeye steak, thinly sliced into bite-sized strips
- Salt and pepper, to taste
Garlic Butter
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
Rice and Eggs
- 4 cups cooked day-old long-grain white rice
- 2 large eggs
Seasonings and Extras
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil, divided
- 3 green onions, chopped
Instructions
- Prepare the Steak: Cut steak into thin, bite-sized strips and season lightly with salt and pepper. Heat 1 tablespoon vegetable oil in a skillet over medium-high heat and quickly sear the steak pieces until browned but still tender. Remove and set aside.
- Cook the Eggs: In the same skillet, add a little more oil if needed. Scramble the eggs until just set, breaking them into small pieces as they cook. Transfer to a plate with the cooked steak.
- Sauté the Garlic: Lower heat slightly. Add butter to the skillet and once melted, stir in minced garlic. Cook until fragrant and golden, being careful not to burn it.
- Fry the Rice: Add the cold cooked rice to the skillet and toss to coat evenly with the garlic butter. Stir frequently to separate grains and achieve a slight golden crisp.
- Combine All Ingredients: Return cooked steak and scrambled eggs to the skillet. Drizzle with soy sauce and mix everything together thoroughly. Stir in chopped green onions for freshness and color.
Notes
- Use day-old rice to prevent clumping and soggy texture.
- Cook on high heat to keep steak tender and achieve perfect fried rice texture.
- Add butter after garlic begins cooking to maximize flavor and prevent burning.
- Cook steak in batches if your pan is small to ensure proper searing.
- Adjust seasoning with soy sauce or salt at the end to balance flavors.
