Instructions
- Prepare the Gelatin: Soak the gelatin sheets in cold water for about 5 minutes until soft, or sprinkle powdered gelatin over cold water to bloom. This ensures the mousse will set into firm yet tender domes.
- Heat Pomegranate Juice and Sugar: Warm the pomegranate juice gently over low heat and stir in the sugar until fully dissolved. Remove from heat and mix in the softened gelatin until completely melted and combined.
- Melt White Chocolate: Gently melt the white chocolate in a double boiler or microwave in short bursts, stirring frequently to avoid burning, adding richness to the mousse.
- Combine Mixtures: Whisk the warm pomegranate and gelatin mixture into the melted white chocolate until smooth for even flavor and texture.
- Whip the Cream: Beat the heavy cream to soft peaks, then gently fold it into the pomegranate mixture to create an airy and silky mousse texture, taking care not to overmix.
- Mold the Domes: Pour the mousse into silicone dome molds, smoothing the tops. Refrigerate for at least 4 hours or overnight for best firmness.
- Prepare the Glossy Glaze: Soften gelatin for glaze. Combine glucose syrup, condensed milk, and gelatin, then warm and stir until smooth. Let cool slightly until thick but pourable.
- Glaze the Domes: Carefully unmold the set mousse domes onto a wire rack and pour the slightly cooled glaze over each dome to achieve a flawless shiny coating. Allow glaze to set for 15-20 minutes before serving.
