Instructions
- Prepare the vegetables: Wash the zucchini and slice into thin rounds or half-moons for even cooking. Finely chop the onion and smash the garlic cloves to release their flavors.
- Brown the ground beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until fully browned, breaking it up with a spoon. Drain excess fat as needed to keep the dish light.
- Sauté onions and garlic: Push the beef to one side of the skillet. Add onions and garlic to the empty space and cook until onions turn translucent and fragrant, about 3-4 minutes, stirring occasionally with the beef.
- Add zucchini and tomatoes: Stir in the sliced zucchini, canned diced tomatoes, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until zucchini softens but remains slightly firm.
- Assemble and bake: Transfer the mixture to a casserole dish. Evenly sprinkle shredded cheese over the top. Bake at 375°F (190°C) for 20-25 minutes until the cheese is melted, bubbly, and golden brown.
