Hamburger & Potato Casserole

A comforting and hearty Hamburger & Potato Casserole featuring juicy ground beef, tender sliced potatoes, and a creamy cheddar cheese sauce. Perfect for quick weeknight dinners or family meals, this easy-to-make casserole combines simple ingredients into a savory, cheesy dish that satisfies all ages and tastes.

  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

Meat & Vegetables

  • 1 lb ground beef (lean or regular)
  • 4 medium potatoes (Russet or Yukon gold), peeled and thinly sliced
  • 1 medium onion, finely chopped

Sauce & Cheese

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk or cream
  • 2 cups shredded cheddar cheese

Other

  • 2 tbsp butter
  • Salt, to taste
  • Black pepper, to taste
  • Optional: garlic powder, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. Prepare the Ingredients: Peel and slice the potatoes into thin, even rounds for consistent cooking. Finely chop the onion. Preheat your oven to 375°F (190°C).
  2. Cook the Beef and Onions: In a large skillet, melt butter over medium heat. Add the chopped onions and sauté until translucent. Add the ground beef and cook, breaking it up with a spoon, until browned but not overcooked. Season with salt, pepper, and optional garlic powder. Drain any excess fat.
  3. Mix the Sauce: In a bowl, combine the cream of mushroom soup with milk or cream. Stir until smooth to create a creamy binder for the casserole.
  4. Assemble the Casserole: Grease a baking dish. Layer half the sliced potatoes, then spread half the beef mixture evenly over them. Pour half the soup mixture over the beef, then sprinkle with a portion of shredded cheese. Repeat the layers, ending with a generous cheese topping.
  5. Bake Until Golden: Cover the dish with foil and bake for about 40 minutes. Remove the foil and bake an additional 10-15 minutes until the potatoes are tender and the cheese is bubbly and golden. Let stand 10 minutes before serving.

Notes

  • Slice potatoes evenly for consistent texture and cooking.
  • Brown the beef just until cooked to keep it juicy and flavorful.
  • Use a sharp cheddar cheese for better flavor balance with the creamy sauce.
  • Let the casserole rest 10 minutes after baking for easier slicing and enhanced flavor.
  • Cover while baking to prevent drying out; uncover near the end for a crispy cheese topping.
