  2. Sauté the Vegetables: In the same pot, add diced onions, carrots, and celery. Cook until softened and lightly golden, stirring frequently. Add minced garlic and cook for about one minute until fragrant.
  3. Build the Stew Base: Stir in tomato paste and cook for 2 minutes to deepen flavor. Pour in red wine, scraping the pot bottom to deglaze and lift browned bits. Once reduced slightly, add beef broth, herbs, and browned beef back to the pot.
  4. Simmer the Stew: Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is fork-tender and flavors meld.
  5. Cook the Pasta: About 10 minutes before serving, add pasta directly into the stew. Cook until tender but still firm, allowing noodles to soak up the broth.
