Instructions
- Prepare the Chicken: Season the chicken breasts or thighs with 1 tablespoon chili powder, 1/2 tablespoon cumin, salt, and pepper. Sear in a hot skillet over medium-high heat until golden brown on both sides and cooked through yet still juicy inside. Remove and set aside.
- Sauté Aromatics: In the same skillet, add diced onions and minced garlic and sauté until translucent and fragrant, forming the flavorful base for your chili.
- Add Corn and Beans: Stir in fresh or grilled corn kernels and drained black beans, mixing to combine textures and flavors.
- Simmer With Tomatoes and Spices: Pour in the fire-roasted diced tomatoes along with the remaining chili powder, cumin, and a pinch of salt. Return chicken to the skillet or pot, cover, and simmer for 15-20 minutes to blend flavors.
- Finish with Fresh Ingredients: Remove the chicken and shred it while warm. Return shredded chicken to the chili and stir in fresh lime juice and chopped cilantro just before serving for a bright and refreshing lift.
