Ingredients
Scale
Beef and Marinade
- 8 oz flank steak or sirloin, thinly sliced against the grain
- 3 tbsp hoisin sauce
- 2 tbsp soy sauce (or tamari for gluten-free)
- 2 cloves garlic, freshly minced
- 1 tsp fresh ginger, minced
- 1 tsp sesame oil (for marinade)
Vegetables
- 1/2 cup bell peppers, sliced
- 1/2 cup snap peas
Noodles
- 6 oz rice noodles or egg noodles
- 1 tsp sesame oil (to toss noodles)
Garnishes (optional)
- 2 green onions, sliced
- Toasted sesame seeds
Instructions
- Prepare the beef and marinade: Thinly slice the beef against the grain. In a bowl, combine hoisin sauce, soy sauce, minced garlic, ginger, and a drizzle of sesame oil. Toss the beef strips in this marinade and let it sit for at least 15 minutes while you prepare the rest of the ingredients.
- Cook the noodles: Cook rice or egg noodles according to the package instructions until just tender (al dente). Drain and toss with a small amount of sesame oil to prevent sticking. Set aside.
- Stir-fry the vegetables: Heat a splash of oil in a hot pan or wok over high heat. Add bell peppers and snap peas, stir-frying briefly until they are crisp-tender and vibrant in color.
- Cook the beef: Using the same pan, add the marinated beef and cook over high heat for about 3-4 minutes until browned and cooked through, ensuring the beef stays juicy and flavorful.
- Combine noodles, beef, and veggies: Return the stir-fried vegetables to the pan with the beef. Add the cooked noodles and toss everything together over medium-high heat for 1-2 minutes to let the flavors meld beautifully.
Notes
- Slice beef thinly to ensure quick, tender cooking.
- Don’t overcook the noodles; undercook slightly to maintain texture after tossing with sauce.
- Use high heat when stir-frying to preserve vegetables’ crispness and prevent sogginess.
- Marinate beef for at least 15 minutes to maximize flavor without over-tenderizing.
- Add hoisin and soy sauce gradually to balance sweet and savory flavors to your taste.
