Instructions
- Prepare Your Ingredients: Slice the mushrooms and zucchini, mince the garlic, and season the chicken breasts with salt, pepper, and Italian seasoning. This preparation ensures a smooth cooking process.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Mushrooms and Zucchini: In the same skillet, add a little more olive oil if needed and toss in the minced garlic. Cook briefly until fragrant, then add the mushrooms and zucchini. Sauté until tender and slightly browned, about 5-7 minutes.
- Combine and Simmer: Return the chicken to the skillet, nestling it with the vegetables. Sprinkle additional Italian seasoning over everything, reduce heat to low, and let it simmer for a few minutes to meld the flavors.
- Finish with Parmesan and Parsley: Remove the skillet from heat. Sprinkle freshly grated Parmesan cheese and chopped parsley on top. Let the cheese melt slightly before serving.
