Instructions
- Prepare the Ingredients: Slice chicken breasts into even pieces or strips for quick, uniform cooking. Dice the fresh peaches into small chunks. Slice jalapeños, removing seeds if a milder heat is desired. Mince the garlic. Squeeze fresh lime juice and have honey ready.
- Cook the Chicken: Heat olive oil in a large pan over medium heat. Season chicken pieces with salt and pepper. Add chicken to the pan and sear until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove chicken from pan and set aside.
- Make the Jalapeño Peach Sauce: Reduce heat to low and add minced garlic to the same pan, cooking until fragrant but not burnt. Add diced peaches and sliced jalapeños, cooking a few minutes until peaches soften slightly. Stir in lime juice and honey, allowing the sauce to simmer gently and thicken.
- Combine and Finish: Return the cooked chicken to the pan, coating it evenly with the peach and jalapeño sauce. Allow to warm together for 2-3 minutes to meld flavors. Taste and adjust seasoning with additional salt or pepper if needed.
