Instructions
- Prepare Your Ingredients: Soak the Medjool dates in warm water for 10 minutes if they’re dry to soften them. Zest and juice the lemon, keeping both ready to add fresh flavor.
- Blend the Nuts: Add raw cashews to a food processor and pulse until broken down into a coarse meal, taking care to keep some texture.
- Add Dates and Flavorings: Combine the softened dates, lemon zest, lemon juice, vanilla extract, and a pinch of sea salt with the cashew meal in the food processor. Blend until the mixture clumps together but still retains some texture.
- Form the Balls: Use your hands to squeeze and roll the mixture into small, bite-sized balls about one inch in diameter. If too dry, add a teaspoon of lemon juice or water to help bind.
- Coat and Chill: Roll each ball in shredded coconut or your preferred coating. Place them on a tray and chill in the refrigerator for at least 30 minutes to firm up before serving.
