Marry Me Salmon

Marry Me Salmon is a rich and creamy salmon dish featuring tender, flaky salmon fillets smothered in a luscious sauce made from heavy cream, sun-dried tomatoes, garlic, and Parmesan cheese, finished with fresh herbs. This quick and easy recipe delivers restaurant-quality flavors in under 30 minutes, perfect for impressing guests or treating yourself to a wholesome, flavorful meal.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Salmon

  • 4 fresh salmon fillets (wild or farmed, skin-on or off)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil

Creamy Sauce

  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh basil or Italian herbs, chopped

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry and season them evenly with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Place the salmon in the skillet, skin-side down if the skin is on, and sear for 4-5 minutes until the skin is crisp and golden. Flip the fillets and cook the other side for another 3-4 minutes until the salmon is just cooked through. Remove the salmon from the skillet and set aside.
  2. Make the Creamy Sauce: Reduce the skillet heat to medium-low and add the minced garlic, cooking briefly until fragrant. Pour in the heavy cream and stir, scraping up any browned bits from the pan. Add the chopped sun-dried tomatoes and grated Parmesan cheese, stirring constantly until the sauce thickens and becomes velvety.
  3. Combine and Simmer: Return the salmon to the skillet, spooning the sauce over each piece. Allow the salmon and sauce to simmer gently together for 2-3 minutes so the flavors meld and the salmon finishes cooking perfectly.
  4. Add Fresh Herbs: Remove the skillet from heat and sprinkle with fresh chopped basil or your choice of Italian herbs. Serve immediately, garnished as desired.

Notes

  • Use fresh, high-quality salmon for the best flavor and tender texture.
  • Do not overcook the salmon; it should flake easily with a fork but remain moist.
  • Freshly grated Parmesan melts better and enhances the sauce’s flavor compared to pre-grated cheese.
  • Lightly warming sun-dried tomatoes before adding the cream intensifies their flavor.
  • Simmer the sauce just enough to thicken without losing its silky smooth texture.
