Salmon
- 4 fresh salmon fillets (wild or farmed, skin-on or off)

Creamy Sauce
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh basil or Italian herbs, chopped
Instructions
- Prepare the Salmon: Pat the salmon fillets dry and season them evenly with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Place the salmon in the skillet, skin-side down if the skin is on, and sear for 4-5 minutes until the skin is crisp and golden. Flip the fillets and cook the other side for another 3-4 minutes until the salmon is just cooked through. Remove the salmon from the skillet and set aside.
- Make the Creamy Sauce: Reduce the skillet heat to medium-low and add the minced garlic, cooking briefly until fragrant. Pour in the heavy cream and stir, scraping up any browned bits from the pan. Add the chopped sun-dried tomatoes and grated Parmesan cheese, stirring constantly until the sauce thickens and becomes velvety.
- Combine and Simmer: Return the salmon to the skillet, spooning the sauce over each piece. Allow the salmon and sauce to simmer gently together for 2-3 minutes so the flavors meld and the salmon finishes cooking perfectly.
- Add Fresh Herbs: Remove the skillet from heat and sprinkle with fresh chopped basil or your choice of Italian herbs. Serve immediately, garnished as desired.
