Instructions

  1. Prepare the Filling: Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté the minced garlic and fresh spinach until the spinach is wilted and fragrant. Remove from heat and transfer to a bowl. Add the chopped sun-dried tomatoes, crumbled feta cheese, lemon zest, Italian herbs, salt, and pepper. Mix well to combine all stuffing ingredients evenly.
  2. Butterfly the Chicken Breasts: Place each chicken breast on a cutting board and carefully slice horizontally through the middle, about three-quarters of the way through, to open it up like a book without cutting all the way. This creates a pocket for the stuffing and helps the chicken cook evenly.
  3. Stuff the Chicken: Spoon a generous amount of the spinach, feta, and sun-dried tomato filling into the center of each butterflied chicken breast. Fold the chicken back closed over the filling. Secure the edges with toothpicks if needed to keep the filling inside during cooking.
  4. Sear and Bake: Preheat the oven to 375°F (190°C). Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown.
