Ingredients
Scale
Crust
- Pie crust dough (classic flaky dough for buttery, crisp base)
Filling
- 1 cup chopped pecans (fresh)
- 2 large eggs
- 3/4 cup brown sugar
- 1/2 cup corn syrup
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Prepare the crust: Roll out your pie crust dough on a lightly floured surface and cut into small circles to fit mini muffin tins or tart pans. Press the dough gently into each well, trimming any excess edges.
- Make the filling: In a mixing bowl, whisk together eggs, brown sugar, corn syrup, melted butter, vanilla extract, and a pinch of salt until smooth and combined. Stir in chopped pecans for the perfect filling texture.
- Assemble the pies: Pour the pecan filling evenly into each prepared crust, filling almost to the top but leaving a bit of room to prevent overflow while baking.
- Bake: Preheat your oven to 350°F (175°C) and bake the Mini Pecan Pies for 20-25 minutes or until the filling is set and the crust is golden brown.
- Cool and remove: Allow the pies to cool in the pan for at least 15 minutes before carefully removing them to a wire rack to cool completely.
Notes
- Use room temperature ingredients to help the filling blend smoothly and bake evenly.
- Don’t overfill the crust to prevent spills and ensure even baking.
- Chop pecans roughly to add texture and crunchy bites.
- Optionally, pre-bake the crust lightly (blind bake) to avoid soggy bottoms.
- Cool pies thoroughly to allow the filling to set for perfect slices.
