Ingredients
Scale
Caramelized Pineapple Topping
- 4–6 fresh pineapple rings (ripe for natural sweetness)
- 3 tablespoons unsalted butter
- 1/4 cup brown sugar
Pancake Batter
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 3 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Prepare the Caramelized Pineapple: Heat butter in a skillet over medium heat. Sprinkle brown sugar evenly over the butter. Arrange pineapple rings on top and cook gently for about 3-4 minutes per side, until the sugar melts and the pineapple becomes golden and caramelized. Remove carefully and set aside, reserving any leftover glaze for drizzling.
- Mix the Pancake Batter: In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon (if using), and salt. In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently stir until just combined; the batter should remain slightly lumpy to ensure fluffy pancakes.
- Cook the Pancakes: Preheat a non-stick pan or griddle over medium heat and lightly grease with butter. Pour batter onto the pan forming rounds about 4 inches in diameter. When bubbles appear on the surface, carefully flip each pancake and immediately place a pineapple ring on the cooked side, allowing it to warm into the pancake as it finishes cooking until golden brown.
- Assemble and Serve: Stack the pineapple-topped pancakes on plates. Spoon the reserved caramel glaze over the stack and garnish with desired toppings such as fresh mint or toasted coconut flakes. Serve immediately to enjoy warm and aromatic pancakes.
Notes
- Use ripe pineapples for the best sweetness and caramelization.
- Avoid overmixing the batter to keep pancakes light and fluffy.
- Maintain medium heat on the pan to prevent burning or tough pancakes.
- Let the batter rest for 5 minutes to activate the baking powder fully.
- Use a good non-stick pan to ensure even cooking and easy flipping.
