These bite-sized, indulgent treats are easy to make with minimal ingredients, perfect for holidays, parties, or gifting. Customize their texture and appearance for a stunning and delicious dessert experience.

  • Total Time: 2 hours 20 minutes (including chilling and coating time)
  • Yield: Approximately 24 truffles

Ingredients

Base Ingredients

  • Red Velvet Cake Crumbs – 2 cups (from homemade or store-bought red velvet cake, cooled and crumbled)
  • Cream Cheese – 4 ounces, softened
  • Powdered Sugar – 1 cup
  • Unsweetened Cocoa Powder – 2 tablespoons
  • Vanilla Extract – 1 teaspoon

Coating & Optional Ingredients

  • White Chocolate or Candy Melts – 8 ounces, for coating
  • Red Food Coloring – a few drops (optional, for enhanced color)
  • Chopped Pecans or Walnuts – 1/4 cup (optional, for nutty twist)
  • Ground Cinnamon or Nutmeg – 1/4 teaspoon (optional, for spiced variation)
  • Dark Chocolate or Caramel – for drizzling (optional)
  • Sprinkles, crushed freeze-dried raspberries, edible glitter – for decoration (optional)

Instructions

  1. Prepare the Cake Crumbs: Start by crumbling your cooled red velvet cake into fine crumbs, ensuring a uniform texture so the truffles hold together smoothly.
  2. Mix Cream Cheese and Flavorings: In a mixing bowl, soften the cream cheese and blend it with powdered sugar and vanilla extract until smooth. Stir in cocoa powder and add a few drops of red food coloring if a more vivid red is desired.
  3. Combine Crumbs with Cream Cheese Mixture: Gently fold the red velvet cake crumbs into the cream cheese mixture until you achieve a dough-like consistency that’s easy to scoop and roll.
  4. Shape the Truffles: Using a small cookie scoop or your hands, form bite-sized balls from the mixture. Place them on a parchment-lined tray and chill in the refrigerator for about one hour to firm up.
  5. Coat the Truffles: Melt white chocolate or candy melts according to the package instructions. Dip each chilled truffle ball into the melted coating, letting excess drip off, then place them back on parchment paper. Chill again until the coating hardens completely.
  6. Add Final Touches: Optionally, decorate the truffles with drizzles of dark chocolate or caramel, sprinkles, or crushed nuts to personalize each piece.

Notes

  • Use chilled cream cheese and cake crumbs for better mixture binding and easier rolling.
  • If the mixture is too wet, add extra cake crumbs; if too dry, add a bit more softened cream cheese.
  • Temper coating chocolate properly for a shiny finish and a crisp snap.
  • Dip truffles promptly before the coating chocolate cools to prevent cracking.
  • Store truffles in an airtight container refrigerated for up to one week.
  • Freeze truffles on a baking sheet before transferring to a sealed container for up to three months.
  • Allow frozen truffles to thaw at room temperature; avoid microwaving.
