Potatoes
- 4 cups potatoes (Yukon Gold or red potatoes), cut into bite-sized pieces

- 3 tablespoons olive oil, plus extra for drizzling

- 2 teaspoons fresh rosemary or thyme, chopped (or herb of choice)
Instructions
- Prepare the Potatoes: Wash and cut the potatoes into even bite-sized pieces to ensure uniform roasting. Pat them dry thoroughly with a towel to remove any excess moisture for maximum crispiness.
- Season and Roast the Potatoes: Toss the potatoes with olive oil, salt, pepper, and your choice of fresh herbs. Spread them out in a single layer on a baking sheet to avoid overcrowding, then roast in a preheated hot oven (425°F / 220°C) turning halfway through, until golden brown and crispy, about 25–30 minutes.
- Add the Garlic and Feta: When the potatoes are nearly done, nestle whole garlic cloves among the potatoes and place the block of feta in the center of the pan. Drizzle a little extra olive oil over the cheese and garlic to encourage melting and roasting.
- Bake Until Bubbly: Return the baking sheet to the oven and bake for an additional 10–15 minutes until the feta is soft, slightly golden on top, and the garlic cloves are tender and caramelized.
- Serve Warm: Gently mash some of the baked garlic and feta into the potatoes to combine flavors. Garnish with extra fresh herbs and serve warm for best taste.
