Mushroom & Onion Gravy

  • 8 oz cremini or white button mushrooms, sliced
  • 1 medium sweet onion, diced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour or cornstarch
  • 2 cups beef broth (or vegetable broth for vegetarian)
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the garlic mashed potatoes: Boil peeled and quartered potatoes in salted water until tender, about 15-20 minutes. Drain and let potatoes steam for a few minutes to dry off excess moisture. Mash with minced garlic, butter, heavy cream, salt, and pepper until creamy and smooth.
  2. Form and season the Salisbury steak patties: In a bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, salt, pepper, and onion powder. Mix gently to avoid overworking the meat, then shape into oval patties about 1/2 inch thick.
  3. Brown the patties: Heat a skillet over medium-high heat and sear the patties for about 3-4 minutes per side, until golden brown and crusty. Remove and set aside.
  4. Sauté mushrooms and onions: In the same skillet, melt butter and cook sliced mushrooms and diced onions over medium-low heat until caramelized and tender, about 8-10 minutes.
