Instructions

  1. Prepare Your Ingredients: Wash and cut the potatoes into bite-sized pieces, slice the peppers into strips, and chop the onion. If using large sausage links, slice them into rounds for even cooking.
  2. Brown the Sausage: Heat a drizzle of olive oil in a large skillet or roasting pan over medium heat. Add the sausage and cook until golden brown on all sides, about 5-7 minutes, then remove and set aside.
  3. Sauté the Vegetables: Add the onions, peppers, and potatoes to the same pan. Season with salt, pepper, and Italian herbs. Cook, stirring occasionally, until the veggies start to soften and develop a golden color, about 10 minutes.
  4. Combine and Cook Through: Return the sausage to the pan, toss everything together, reduce heat to low, cover, and let simmer for another 10-12 minutes until the potatoes are tender and the sausage is cooked through.
