Instructions
- Prepare the pudding: In a mixing bowl, whisk together the vanilla pudding mix and cold milk until the mixture is smooth and thickened. Add a few drops of green food coloring and peppermint extract gradually, stirring well, until the color and mint flavor reach your preference.
- Crush the cookies: Using a food processor or placing the cookies in a sealed plastic bag and crushing with a rolling pin, finely crush the chocolate sandwich cookies. Reserve about one-third of the cookie crumbs for the final topping layer.
- Assemble the layers: In a 9×13 inch dish, begin with an even layer of cookie crumbs. Spread a layer of the minty pudding over the crumbs, followed by a layer of whipped topping. Repeat these layers, ending with the reserved cookie crumbs sprinkled on top as a crunchy finish.
- Chill: Cover the assembled dessert tightly with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow the layers to set and the flavors to meld beautifully.
- Serve and enjoy: Slice the dessert into squares and serve chilled. Optionally, garnish with extra whipped cream, a drizzle of chocolate syrup, fresh mint leaves, or mini chocolate chips.
