Slow Cooker Lasagna Soup combines the rich flavors of classic Italian lasagna with the effortless convenience of a slow cooker. This hearty soup features browned ground beef, tender broken lasagna noodles, a savory tomato base, and a melty blend of ricotta, mozzarella, and Parmesan cheeses. Perfect for busy weeknights, it offers a comforting, cheesy meal with minimal prep and cleanup.

  • Total Time: 5 hours 45 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

Meat and Aromatics

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Tomato Base

  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste

Noodles

  • 2 cups broken lasagna noodles

Cheeses

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Optional Vegetables

  • 1/2 cup chopped bell peppers (optional)
  • 1 cup fresh spinach (optional)

Optional Additions for Variations

  • Red pepper flakes or diced jalapeños for spice
  • Gluten-free noodles or riced cauliflower for gluten-free version
  • Plant-based cheese alternatives for dairy-free version
  • Mushrooms or lentils to replace ground beef for vegetarian version

Instructions

  1. Brown the Meat and Sauté Aromatics: In a skillet over medium heat, cook the ground beef until browned and no pink remains. Add chopped onions and garlic, cooking until softened and fragrant to build a flavorful base.
  2. Combine Ingredients in the Slow Cooker: Transfer the cooked ground beef, onions, and garlic into the slow cooker. Add diced tomatoes, tomato sauce, Italian seasoning, and salt and pepper to taste. Stir everything together to blend the flavors.
  3. Cook Low and Slow: Cover the slow cooker and cook on low for 5 to 6 hours allowing the flavors to meld and the base to develop.
  4. Add Broken Lasagna Noodles: About 30 minutes before serving, stir in broken lasagna noodles, ensuring they are submerged to cook evenly and absorb the broth.
  5. Finish with Cheese: When noodles are tender, add dollops of ricotta cheese and sprinkle mozzarella and Parmesan cheese on top. Cover for a few minutes to let the cheese melt and create a gooey finish.

Notes

  • Don’t overcook the noodles; add them towards the end to prevent mushiness.
  • Use fresh herbs like basil or oregano when possible for a brighter flavor.
  • If soup is too thick, stir in a splash of broth or water to loosen consistency.
  • Layer cheese by mixing some into the soup and melting extra on top for creaminess.
  • Prep ahead by browning meat and chopping veggies the night before for a faster start.
