Instructions
- Prepare the Dough: Activate the yeast by dissolving it in warm milk with a pinch of sugar. Wait 5-10 minutes until foamy. In a large bowl, mix flour, salt, and sugar. Add the yeast mixture, melted butter, and eggs. Knead thoroughly for 8-10 minutes until you form a smooth, slightly sticky dough that bounces back when pressed.
- First Rise: Cover the dough with a clean cloth and place it in a warm spot. Let it rise for about 1 hour or until doubled in size, ensuring a light and airy texture.
- Prepare the Filling: While the dough rises, mince the garlic finely and combine it with cottage cheese. Season with salt, pepper, and fresh herbs if desired. Mix well to create a creamy filling.
- Shape the Rolls: Punch down the risen dough gently. Roll it out on a floured surface and cut into small squares or circles. Spoon a generous portion of the cottage cheese and garlic filling onto each piece, then fold and seal the edges carefully to encase the filling.
- Second Rise: Place the shaped rolls on a parchment-lined baking sheet. Cover and let them rise again for 30 minutes, allowing them to become ultra light and fluffy.
- Bake to Golden Perfection: Preheat the oven to 375°F (190°C). Brush the tops with melted butter or an egg wash for a shiny golden crust. Bake for 15-20 minutes until puffed and lightly browned.
