- 1 cup crisp lettuce, chopped
- 1/2 cup diced tomatoes
- 1/2 cup sliced bell peppers
- 1/2 cup black beans (rinsed if canned)
- 1/2 cup corn kernels (rinsed if canned)
- 1 avocado or 1/2 cup prepared guacamole
Fresh Herbs & Extras
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
Instructions
- Prepare the Chicken: Season chicken breasts generously with the Southwestern seasoning blend. Heat oil in a skillet over medium-high heat and cook chicken for 6-8 minutes on each side until golden brown and cooked through. Remove from heat and let rest before slicing thinly to retain juices.
- Prep Your Fresh Ingredients: While the chicken cooks, wash and chop the lettuce, dice tomatoes and bell peppers, rinse black beans and corn if canned, slice the avocado or prepare guacamole, and finely chop the cilantro for garnish.
- Assemble the Wrap: Lay a flour tortilla flat and spread a generous layer of Greek yogurt or sour cream as a base. Layer on sliced chicken, fresh vegetables, black beans, corn, shredded cheese, and avocado or guacamole. Finish with a sprinkle of cilantro and a squeeze of fresh lime juice.
- Wrap and Serve: Fold in the sides of the tortilla and roll it tightly from one end to the other to secure the filling. Slice in half if desired and serve immediately or wrap tightly for on-the-go meals.
