- 1 lb chicken thighs, bite-sized pieces
- 8 oz rice noodles or egg noodles

- 4 garlic cloves, minced
- 1/4 cup soy sauce (or gluten-free tamari for GF option)
- 2 tablespoons honey or brown sugar
- Optional: 1/4 teaspoon chili flakes

- 2 tablespoons vegetable oil
- 2–3 green onions, sliced for garnish
Instructions
- Prepare the noodles: Soak or boil your noodles according to the package instructions until tender but still chewy. Drain and set aside to prevent sticking.
- Sear the chicken: Heat vegetable oil in a wide pan over medium-high heat. Add the bite-sized chicken pieces and cook until golden brown and cooked through. Remove chicken and set aside.
- Make the sticky garlic sauce: In the same pan, add minced garlic and sauté until fragrant but not burnt. Stir in soy sauce, honey or brown sugar, and optional chili flakes. Let the sauce simmer until thickened and glossy.
- Combine noodles and chicken: Return the chicken to the pan and toss with the sauce to coat thoroughly. Add the noodles and gently mix until noodles are evenly coated with the sticky garlic sauce.
- Finish and garnish: Turn off the heat and sprinkle sliced green onions on top for freshness. Serve hot for the best flavor and texture.

- Use fresh garlic for brighter flavor.
- Do not overcook noodles; leave them slightly underdone as they will cook further in the sauce.
- Brown chicken well to add caramelized depth to the dish.
