Instructions
- Prepare the Cheesecake Filling: Beat softened cream cheese with sugar and vanilla extract until smooth and creamy. Gently fold in finely chopped fresh strawberries to keep the fresh fruity burst in every bite.
- Make the Cookie Dough: Cream together softened butter and granulated sugar until fluffy. Add the egg and vanilla extract, mixing well. In a separate bowl, whisk together all-purpose flour and baking soda, then gradually incorporate into the wet ingredients until a soft, slightly sticky dough forms.
- Assemble the Cookies: Divide the dough into small balls. Flatten each ball gently in your palm, place a spoonful of the cheesecake filling with strawberry chunks in the center, then carefully wrap the dough completely around the filling, sealing all edges to enclose the filling fully.
- Bake: Place the stuffed cookie dough balls onto a parchment-lined baking sheet about two inches apart. Bake at 350°F (175°C) for 12–15 minutes, or until the edges turn light golden brown. Allow cookies to cool on the pan for a few minutes before transferring them to a wire rack to cool completely.
