Instructions
- Prepare the Dough: In a medium bowl, whisk together the all-purpose flour, matcha powder, baking powder, and salt. In a separate large bowl, cream the softened butter with granulated and brown sugars until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet mixture and mix until a smooth dough forms.
- Chill the Dough: Wrap the dough tightly in plastic wrap and chill in the refrigerator for at least 30 minutes. This step firms up the butter, helping the cookies maintain their shape during baking and enhancing the overall flavor.
- Bake the Cookies: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper. Scoop tablespoon-sized balls of dough onto the sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges start to set but the centers remain soft. Let the cookies cool completely on wire racks before frosting.
- Make the Strawberry Frosting: Puree fresh strawberries and strain to remove seeds if desired. Beat softened butter until creamy, then gradually mix in powdered sugar and strawberry puree until smooth and spreadable. Add milk or cream, one teaspoon at a time, to achieve desired consistency.
- Frost the Cookies: Once the cookies are completely cooled, spread a generous layer of strawberry frosting on top using a knife or piping bag. Optionally, decorate with thin strawberry slices or edible flowers for an attractive finish.
