Instructions
- Prepare the Potatoes: Boil the russet potatoes until they are tender when pierced with a fork. Drain well, then mash them along with butter, sour cream, salt, pepper, garlic powder, and smoked paprika until creamy yet firm enough to shape.
- Prepare the Filling: While the potatoes cook, thoroughly cook your chosen protein (bacon, sausage, or chicken). Grate the cheddar and mozzarella cheeses. Chop green onions and any other vegetables or aromatics you want to include.
- Form the Potato Bombs: On a clean surface, flatten a portion of the mashed potatoes into a disk. Place a spoonful of the filling mixture in the center, then carefully mold the potato around the filling to form a tight ball, ensuring the filling is fully encased.
- Bake Until Golden: Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper and place the potato bombs on the tray. Bake for 20-25 minutes until the exterior is golden and slightly crispy and the cheese inside is melted and bubbly.
