Instructions
- Prepare and roast the sweet potatoes: Preheat your oven to 425°F (220°C). Peel and dice the sweet potatoes into bite-sized cubes, then toss them with olive oil, salt, pepper, and paprika. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway, until tender and golden on the edges.
- Cook the ground beef mixture: While the sweet potatoes roast, heat a skillet over medium heat with a drizzle of olive oil. Add the chopped onions and garlic, sautéing until fragrant and translucent. Add the ground beef, breaking it up with a spoon. Season with cumin, salt, and pepper. Cook until browned and fully cooked, about 8-10 minutes. Drain any excess fat.
- Assemble the bowls: Divide the roasted sweet potatoes and cooked beef evenly into serving bowls. Top each bowl with a generous scoop of cottage cheese and sprinkle with freshly chopped cilantro or parsley for a fresh finish.

- Use room temperature cottage cheese to blend better with the warm ingredients and prevent the bowl from feeling cold.
- Cut sweet potato cubes uniformly for even roasting and to avoid underdone pieces.
