Instructions
- Prepare the Cookie Dough: Start by creaming the unsalted butter and granulated sugar together until light and fluffy. Add eggs and vanilla extract, mixing well. Gradually incorporate the all-purpose flour and salt to form a soft dough. Chill the dough for at least 30 minutes to firm up.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Roll out the dough and cut into circles or your preferred shapes. Arrange the cookies on a parchment-lined baking sheet and bake for 10-12 minutes until just golden around the edges. Allow the cookies to cool completely.
- Make the Custard Filling: In a saucepan, whisk together egg yolks, sugar, cornstarch, and salt. Slowly add warm whole milk while whisking constantly. Cook the mixture over medium heat until it thickens and coats the back of a spoon. Remove from heat, stir in vanilla extract, and let the custard cool completely.
- Prepare the Chocolate Glaze: Heat heavy cream just until steaming. Pour it over semisweet chocolate chips in a bowl. Let sit for a couple of minutes, then stir until the chocolate is glossy and smooth.
- Assemble the Dessert: Spread or pipe the cooled custard onto the flat side of one cookie, then sandwich it with another cookie. Dip or drizzle the top with the chocolate glaze. Allow the glaze to set slightly before serving.
