This quick and customizable sandwich delivers a satisfying balance of savory, creamy, and fresh flavors, making it perfect for busy mornings or leisurely weekend breakfasts.

  • Total Time: 20 minutes
  • Yield: 1 sandwich

Ingredients

Proteins & Dairy

  • Fresh large eggs (2 per sandwich)
  • Crispy bacon (3-4 slices per sandwich)
  • Sharp cheddar cheese, sliced (2 slices per sandwich)

Bread & Spreads

  • Buttery brioche bun (1 per sandwich)
  • Mayo or aioli, for spreading (1-2 tablespoons)
  • Butter or olive oil, for toasting (1 tablespoon)

Vegetables

  • Ripe tomato slices (2-3 slices per sandwich)
  • Crisp lettuce leaves (1-2 leaves per sandwich)

Instructions

  1. Prepare the Bacon: Fry the bacon in a skillet over medium heat until crispy. Transfer it to a paper towel-lined plate to drain excess fat, ensuring the bacon stays crunchy and flavorful.
  2. Cook the Eggs: Using the same skillet (drain some bacon fat if necessary), cook the eggs according to your preference – fried, scrambled, or over-easy. Season lightly with salt and pepper.
  3. Toast the Bun: Butter the inside of the brioche buns and toast them in a clean pan or toaster oven until golden and slightly crispy on the edges, adding texture and warmth.
  4. Melt the Cheese: Place sliced cheddar cheese on the hot eggs just before removing them from heat, allowing the cheese to melt thoroughly and create a luscious layer.
  5. Assemble Your Sandwich: Spread mayo or aioli on the bottom bun, then layer with lettuce and tomato slices. Add the cheesy eggs and bacon on top, and finish with the bun’s top half for a perfect handheld sandwich.

Notes

  • Use fresh ingredients: fresh eggs and quality bacon elevate flavors.
  • Cook eggs on medium-low heat for tender textures.
  • Do not skip toasting the bun to avoid sogginess.
  • Place wetter ingredients like tomato above lettuce to keep the bread crisp.
  • Experiment with different sauces such as chipotle mayo or classic mustard for flavor twists.
