Proteins
- 4–6 Chicken thighs, skin on, bone-in for best flavor
- 12 oz raw shrimp, peeled and deveined
Vegetables & Aromatics
- 1 Red bell pepper, sliced
- 1 Green bell pepper, sliced
- 1 Medium onion, sliced
- 3 cloves garlic, minced
- 2–3 Green onions, sliced for garnish
Seasonings & Liquids
- 2 tablespoons Cajun seasoning (blend of paprika, garlic powder, cayenne, herbs)
- 2 tablespoons olive oil or butter
- 1/2 cup chicken broth or stock
- 1 tablespoon fresh lemon juice

- Cooked rice, pasta, or vegetables to serve over
Instructions
- Prep and Season: Pat chicken thighs dry and generously coat all sides with Cajun seasoning. Peel and devein the shrimp, seasoning lightly with Cajun seasoning as well. Slice bell peppers and onions and mince garlic so everything is ready before cooking.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and cook for 5-7 minutes until browned and crisp. Flip and cook an additional 5 minutes until cooked through. Remove chicken from pan and set aside, leaving browned bits in the skillet.
- Sauté the Vegetables: Add more oil if needed to the skillet. Add bell peppers, onion, and garlic and sauté for 3-4 minutes until fragrant and slightly tender, stirring frequently to avoid burning.
- Cook the Shrimp: Push vegetables to the side of the pan. Add shrimp and cook 2-3 minutes per side until pink, opaque, and just cooked through. Mix shrimp and vegetables together for combined flavor.
- Combine and Finish: Return chicken to the skillet. Pour in chicken broth and simmer gently for about 5 minutes to reduce the sauce slightly. Finish by squeezing fresh lemon juice over the top and sprinkling chopped green onions for a bright finish.
Notes
- Use freshly ground Cajun seasoning for best flavor.
- Do not overcook shrimp to avoid rubbery texture.
- Let chicken rest a few minutes after cooking to retain juices.
- Deglaze the pan well with broth to incorporate all browned bits into the sauce.
- Adjust spice level by modifying cayenne amount to taste.
