Seafood Filling
- 1 cup shrimp, peeled and deveined
- 1 cup crab meat
- 1 cup white fish, cut into chunks
- 2 tablespoons butter
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 cup heavy cream
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Cheddar Bay Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 cup fresh parsley, chopped
- 1 cup sharp cheddar cheese, shredded
- 3/4 cup milk
- 1/4 cup butter, melted
Instructions
- Prepare the Seafood Filling: Start by sautéing diced onions, celery, and carrots in butter over medium heat until tender, about 5 minutes. Stir in the flour to create a roux and cook 1-2 minutes. Gradually whisk in milk and heavy cream, cooking and stirring until the mixture thickens into a creamy sauce. Add the seafood mix, Old Bay seasoning, salt, pepper, and chopped parsley. Cook gently until seafood is just cooked through, about 5 minutes. Remove from heat.
- Make the Cheddar Bay Biscuits: In a large bowl, mix the dry ingredients—flour, baking powder, garlic powder, salt, fresh parsley, and shredded cheddar cheese. In a separate bowl, combine the milk and melted butter. Gently fold the wet ingredients into the dry mixture just until combined, creating a soft dough. Do not overmix to ensure tender biscuits.
- Assemble the Pot Pie: Pour the creamy seafood filling into a greased baking dish. Drop spoonfuls of the biscuit dough evenly over the top of the filling, creating biscuit crowns to bake.
- Bake to Perfection: Preheat oven to 375°F (190°C). Bake the assembled pot pie for 20-25 minutes, or until the biscuits have risen, turned golden brown, and a toothpick inserted comes out clean. Remove from oven and let rest for 5-10 minutes before serving to allow flavors to meld.
Notes
- Use fresh or properly thawed seafood for optimal taste and texture.
- Do not overmix biscuit dough to keep biscuits light and tender.
- Season both filling and biscuits generously for well-rounded flavors.
- Allow pot pie to rest after baking to thicken filling and meld flavors.
- Opt for sharp or extra-sharp cheddar cheese for signature biscuit flavor.
