- Pinch of nutmeg

Instructions
- Prepare the Béchamel Sauce: Melt butter in a saucepan over medium heat. Whisk in the flour to form a roux, cooking briefly. Slowly add milk while whisking continuously to prevent lumps. Cook until the sauce is thick and creamy. Stir in Dijon mustard, a pinch of nutmeg, salt, and pepper. Set aside once smooth.
- Assemble the Toast: Lay out bread slices and spread a thin layer of béchamel on each. On half of the slices, layer ham followed by a generous amount of grated Gruyère cheese. Top with the remaining bread slices to form sandwiches.
- Add More Sauce and Cheese: Spread another layer of béchamel on top of each sandwich and sprinkle extra Gruyère cheese over the béchamel to ensure a golden, crusty finish.
- Toast and Broil: Melt butter in a skillet over medium heat. Toast the sandwiches on both sides until golden brown and crispy. Transfer sandwiches to a baking sheet and broil in the oven for 2-3 minutes until the cheese on top is melted and bubbly. Watch closely to prevent burning.
